“We use Lion Quality eggs because of the standards to which they are produced, it is a well-respected mark and we know that Lion eggs are high quality. At the end of the day, we have confidence in our products. We must use goodness knows how many eggs a day; from custards to mayonnaise, we probably use 1,000 a day in our tearooms. We are now looking to extend this across more lines.”
