Ingredients
- 4 British Lion eggs (£1.75)
- ½ a red onion, thinly sliced (£0.25)
- 4 tsp garam masala (£1.00)
- 3 garlic cloves, roughly chopped (£0.40)
- 1 large tomato, roughly chopped (£0.90)
- Cupboard staples: 2 tbsp olive oil, salt and pepper
- Optional: Warm parathas or naans to serve and fresh coriander to garnish
Total: £4.30
Method
- Heat the olive oil in a medium pan on medium heat.
- Sauté the red onions and garlic for 2–3 minutes, until slightly softened.
- Add the tomato, season with salt and pepper, and sauté for another 2 minutes.
- Add the garam masala, mix, then add a splash of water and continue stirring.
- Crack four British Lion eggs in to gently scramble for another few minutes, then remove from the heat.
- Sprinkle with fresh coriander and serve with warm parathas or naans.
