Ingredients

  • 4 British Lion eggs (£1.75)
  • ½ a red onion, thinly sliced (£0.25)
  • 4 tsp garam masala (£1.00)
  • 3 garlic cloves, roughly chopped (£0.40)
  • 1 large tomato, roughly chopped (£0.90)
  • Cupboard staples: 2 tbsp olive oil, salt and pepper
  • Optional: Warm parathas or naans to serve and fresh coriander to garnish

Method

  1. Heat the olive oil in a medium pan on medium heat.
  2. Sauté the red onions and garlic for 2–3 minutes, until slightly softened.
  3. Add the tomato, season with salt and pepper, and sauté for another 2 minutes.
  4. Add the garam masala, mix, then add a splash of water and continue stirring.
  5. Crack four British Lion eggs in to gently scramble for another few minutes, then remove from the heat.
  6. Sprinkle with fresh coriander and serve with warm parathas or naans.
