16 April is Eggs Benedict day!

Thursday April 16th is Eggs Benedict day, a celebration of the 120 year old recipe loved by breakfast and brunch enthusiasts. The original recipe was a buttered English muffin with poached eggs, sliced ham and rich hollandaise sauce, which was first served in 1894 at the famous Waldorf Hotel in New York. Since then a number of variations have been created such as Eggs Florentine (made with spinach instead of ham) and Eggs Royale (made with salmon).
