Head chefs choose Lion
Head Chef Ian Gibbs from The Nici Hotel, Bournemouth, has been talking about why he insists on using British Lion eggs on his menu.
Gibbs recently shared a video via Staff Canteen creating a beef tartare with British Lion eggs. He says he only uses British Lion eggs because “the Lion gives a guarantee on not only quality but safety, which is especially important when serving raw eggs."
British Lion eggs are approved by the Food Safety Agency to serve runny to all, including vulnerable groups.
