Speedy egg breakfasts that pack a protein punch
For a healthy breakfast on the go, it’s easy to default to what’s on the coffee shop shelf on the way to work, but British Lion eggs has proved that it’s just as easy to make your own speedy egg breakfasts at home.
Nutritionist Dr Juliet Gray has devised a selection of healthy breakfast recipe ideas for people to make on the run and TV celebrity and busy mum Helen Skelton has given them her seal of approval. Each recipe can be whipped up in less than ten minutes and is nutritionally balanced. From wraps that can be eaten on the go, to scrambles that can be popped into a tub and taken to work, each recipe is packed full of protein, ensuring a speedy and healthy start to the day.
The Micro Mexican Pot, baked eggs on a bed of peppers, tomatoes, onions and avocado, takes minutes in the microwave, and the Green Protein Pot, combines roughly mashed avocado with spinach, seeds, lime and chilli flakes, and can be made in the time it takes to hard boil an egg.
