Quick egg muffins for children

This breakfast sandwich is quick to prepare and very child-friendly
Ingredients
- 1 large British Lion egg
- 20g unsalted butter
- 1 English muffin or crumpet
- 2 slices of wafer thin ham
Method
1. Beat the egg in a small bowl until well combined. Heat half the butter in a small frying pan over medium-low heat. Add the egg and cook, stirring occasionally, until creamy and just set.
2. Meanwhile, slice the English muffin in half and toast. Spread the remaining butter on the bottom half of the muffin. Top with ham and scrambled egg, then sandwich together with the top half. Enjoy immediately.
