Funny face frittata

I like to decorate my frittatas with some fresh vegetables to create a smiley face so it’s more appealable to my 3yr old daughter, the 7yr old doesn’t need convincing! This is a very popular dish with my girls and a quick and easy way to get them to eat something nutritious. You can eat it warm or cold.
Ingredients
- 2 tsp olive oil
- 4 large British Lion eggs
- 50ml milk
- 2 small new potatoes, thinly sliced
- 100g crumbled feta
- freshly ground black pepper
- 6 cherry tomatoes, halved
- 3 baby red, yellow and orange peppers, chopped
- 50g small broccoli florets
Method
- Preheat the oven to 180°c / gas 4
- Rub the oil over the inside of two 10 x 10 x 4cm square oven-proof dishes
- Crack the British Lion eggs into a bowl. Add the milk and whisk until light and fluffy
- Add half of the crumbled feta and a little ground black pepper
- Arrange the sliced potatoes on the base of each dish, add the chopped vegetables, reserving a few pieces to make the smiley faces
- Pour the egg and cheese mixture over the vegetables and sprinkle with the remaining feta
- Use the reserved vegetables to make smiley faces on the top of each dish
- Cook for 20 minutes, until the frittata is golden brown and serve either hot or cold
